All the flavours of a spiced steak sandwich in a salad, for the carb watchers! Salad is a great way to use grilled flank steak.

Ingredients

1 bag (3 hearts) PC Organics Romaine Lettuce Hearts , trimmed and sliced
Half red onion, thinly sliced
1 pint (283 g) PC Organics Grape Tomatoes , halved lengthwise
1 cup (250 mL) PC Lightly Buttered Flavour Sourdough Croutons
2 PC Easy Cook!™ Montreal-Style Spice Flank Steak (each about 1 lb), at room temperature
1 tsp (5 mL) olive oil
1/3 cup (75 mL) PC French Vinaigrette
1/4 tsp (1 mL) each salt and freshly ground black pepper
3 PC Zesty Garlic Deli Sliced Pickles , chopped

Instructions

  1. Preheat barbecue to medium-high heat.
  2. In large bowl combine romaine hearts, onion, tomatoes and half of croutons. Set aside.
  3. Brush flank steak with olive oil. Place on greased grill. Cook for 3 to 6 minutes per side or until medium doneness. Transfer to cutting board and let stand for 5 minutes.
  4. Toss salad with vinaigrette, salt and pepper. Thinly slice flank steak against the grain. Lay steak slices on top of salad. Sprinkle with pickles and remaining croutons.
