Ingredients

1 cup (250 mL) PC Thai Jasmine Rice
1 tbsp (15 mL) PC Sugar, Chocolate & Cinnamon Blend Grinder ground
1 3/4 cups (425 mL) water
1 can (14 oz/398 mL) coconut milk
1/2 cup (125 mL) packed brown sugar
1 ripe mango, diced

Instructions

  1. In small saucepan, bring water to a boil. Stir in rice. Reduce heat to low, cover and cook for 8 to 10 minutes or until water is absorbed. Remove from heat. Keep lid on.
  2. In another small saucepan, heat coconut milk over medium heat until hot, about 1 to 2 minutes. Do not boil. Stir in sugar until dissolved. Stir half of coconut milk mixture into rice. Let stand, covered, for 20 minutes.
  3. Stir in mango and remaining coconut milk mixture. Spoon into dessert bowls. Sprinkle with spice grinder. Garnish with mango slices and mint sprigs, if desired.

 

Chef's Tips

Substitute other fresh tropical fruit, such as papaya or pineapple.
