Pink flakes of rich salmon are beautiful against sesame-dressed green spinach. A great dish for entertaining. A source of iron and Omega-3.

Ingredients

1 pkg (142 g) PC Organics Baby Spinach
3 tbsp (45 mL) PC Toasted Sesame Vinaigrette
2 boneless skin-on salmon fillets, about 1 lb/500 g
1 bunch asparagus trimmed
1 ripe avocado, sliced

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Place large square of foil on work surface. Place salmon on foil. Draw two opposite sides of foil up and fold, envelope-style. Fold remaining two sides up. Place package on baking sheet.
  3. Bake in centre of oven for 15 to 18 minutes. Open package of foil. Cool salmon. Meanwhile, in large pan of boiling water, cook asparagus for 3 minutes. Drain. Cool under cold running water. Drain. Pat dry on clean kitchen towel.
  4. Discard salmon skin. Flake cooled salmon into bite-size pieces. In bowl, place salmon, asparagus, spinach and avocado. Pour vinaigrette over; toss to coat.

Chef's Tips

Serve with PC French Baguette to round out the meal.
