Ingredients

2 cups (500 mL) cherry tomatoes halved
1/3 cup (75 mL) PC Balsamic Vinaigrette
1/4 cup (50 mL) thinly sliced fresh basil
1/4 cup (50 mL) shallots thinly sliced (about 1 large shallot)
1 pkg (340 g) PC Splendido Part-skim Stretched Mozzarella Cheese

Instructions

  1. With a sharp knife, cut mozzarella ball almost all the way through, into eight wedges. Place in centre of serving plate.
  2. In bowl, toss together tomatoes, shallots, dressing and half of basil. Arrange around mozzarella. Sprinkle with remaining basil.
