Ingredients

1 can (540 mL) no name White Kidney Beans, rinsed and drained
2 cans (each 142 g) PC Blue Menu Seasoned Chunk Chicken Breast , drained
1/2 cup (125 mL) finely diced red onion
1/4 cup (50 mL) chopped fresh basil
1 large tomato, diced
1 tbsp (15 mL) PC Splendido Extra Virgin Olive Oil - Cold Pressed
1 tsp (5 mL) grated lemon rind
1/4 tsp (1 mL) freshly ground black pepper

Instructions

  1. In bowl, stir together beans, chicken, red onions, basil, tomato, oil, lemon rind and pepper.

 

Chef's Tips

Serve on top of a bed of lettuce.

Use a zester or small holes of a box grater to grate lemon rind.
