Manhattan chowder always has tomato in it. This makes a great first course soup, or to serve it as a main meal round it out with whole grain bread and a green salad. You can buy clam juice in the seafood area of the store.

Ingredients

4 tsp (20 mL) PC Blue Menu Celeb Margarine - Original
2 stalks celery, chopped
1 large leek, pale green and white parts only, chopped
1/2 tsp (2 mL) salt
1/4 tsp (1 mL) freshly ground black pepper
2 bottles (each 236 mL) clam juice
2 cups (500 mL) PC Blue Menu Chicken Broth
1 can (796 mL) PC Blue Menu Diced Tomatoes
1 lb (500 g) new potatoes, peeled and chopped
1 pkg (280 g) PC Blue Menu Wild Pacific Halibut Skinless Fillets , thawed and chopped
2 tbsp (25 mL) chopped fresh dill, tarragon or chives

Instructions

  1. In large saucepan, melt margarine over medium heat; cook celery, leek, salt and pepper for 6 minutes or until vegetables are softened.
  2. Stir in clam juice, broth, diced tomatoes and juices, and potatoes. Bring to a boil. Reduce heat to simmer; cover and cook for 12 minutes or until potatoes are tender.
  3. Add halibut and simmer for 3 minutes or until fish is cooked through. Stir in dill.
