Ingredients

1 tbsp (15 mL) olive oil
4 cups (1 L) mixed sliced mushrooms, such as shiitake, cremini and button
1/4 tsp (1 mL) salt
1/8 tsp (0.5 mL) freshly ground black pepper
2 tsp (10 mL) PC Splendido Balsamic Vinegar of Modena - Three Leaf
½ cup (125 mL) drained canned San Marzano tomatoes
1 PC Blue Menu Multigrain Thin Pizza Crust
¼ cup (50 mL) grated Asiago cheese, about 1 oz/ 30 g
½ tsp (2 mL) chopped fresh tarragon or thyme

Instructions

  1. Preheat oven to 450°F (230°C). In large frying pan, heat olive oil over medium heat; cook mushrooms for 6 to 8 minutes, stirring occasionally, or until they start to brown and liquid evaporates. Stir in salt, pepper and vinegar; cook until vinegar evaporates, about 30 seconds. Set aside.
  2. Crush tomatoes with your hands. Using spoon, spread over pizza crust, leaving ½ inch (1 cm) border bare all around. Sprinkle with cheese and spread mushroom mixture over top. Sprinkle with tarragon.
  3. Bake directly on middle oven rack for 6 to 8 minutes or until cheese melts and crust is brown.
