Cauliflower Ham and Parmesan Frittata

Using a nonstick frying pan lets you get away with using less fat to cook the frittata. All eggs are a complete source of protein, but omega eggs also benefit heart health and brain development.

2 tbsp (25 mL) PC Splendido Extra Virgin Olive Oil - Cold Pressed
1 tbsp (15 mL) PC Country Churned Butter - Unsalted
1 small head cauliflower, trimmed and cut in small florets
9 PC Blue Menu Oméga-3 Eggs - Large
1/3 cup (75 mL) 10% cream
3 oz (90 g) sliced Black Forest ham, cut in strips
1/3 cup (75 mL) PC 100% Parmesan Grated Cheese
3 tbsp (45 mL) chopped fresh parsley
½ tsp (2 mL) salt
1/4 tsp (1 mL) freshly ground black pepper
¼ tsp (1 mL) PC Garlic frozen chopped

Instructions

  1. Preheat broiler to high. In 10-inch (25 cm) ovenproof nonstick frying pan, heat olive oil and butter over medium heat until butter melts. Cook cauliflower for 12 to 15 minutes, stirring occasionally, or until browned and almost cooked through. Meanwhile, in bowl, whisk together eggs, cream, ham, Parmesan, parsley, salt and pepper.
  2. Stir garlic into cauliflower; cook for 1 minute longer, stirring. Pour egg mixture over cauliflower. Cover pan and turn heat to low. Cook for 12 to 15 minutes or until top is almost set and frittata is golden brown on bottom.
  3. Place 6 inches (15 cm) under broiler. Broil for 3 to 4 minutes or until eggs are set and starting to brown.
  4. Slide rubber spatula around outer edge of frittata and slide onto cutting broad. Cut into five wedges.
