Some of the classic pizza flavours appear in this yummy pasta dish. If some of your family like spice and some don’t, simply put the hot pepper flakes on the table so everyone can add to their own serving, perhaps accompanied by PC 100% Grated Parmesan Cheese, just like they have on the tables of Italian pizza places.

Ingredients

5 oz (150 g) Ziggy’s sliced pepperoni, cut in half
2 tbsp (25 mL) PC Splendido Extra Virgin Olive Oil - Cold Pressed
1 large onion, chopped
¼ tsp (1 mL) PC Garlic frozen chopped
2 cups (500 mL) no name Whole Tomatoes in Juice
½ tsp (2 mL) salt
¼ tsp (1 mL) hot pepper flakes (optional)
4-1/3 cups (1.075 L) PC Splendido Enriched Pasta - Cavatappi
3 tbsp (45 mL) chopped fresh parsley

Instructions

  1. In large frying pan, cook pepperoni over medium heat for 3 to 5 minutes or until lightly browned. Transfer to a bowl. Wipe pan clean with paper towel.
  2. In same pan, heat olive oil over medium-low heat; cook onion for 10 minutes, stirring occasionally, or until soft and starting to brown. Stir in garlic; cook for 1 minute, stirring. Stir in tomatoes with juices, salt and hot pepper flakes (if using). Bring to a boil. Reduce heat to low; cover and cook for 10 to 12 minutes or until slightly thickened. Stir in pepperoni.
  3. In large saucepan of boiling, salted water, cook cavatappi for 7 to 8 minutes or until tender but firm. Drain. Toss with sauce and parsley.
