Italian-inspired, this hearty barbecue dish is sure to please the meat lovers in your family. Hungry teenagers might appreciate a loaf of crusty bread, served with a ramekin of olive oil and balsamic vinegar for dipping.

Ingredients

2 large yellow-fleshed potatoes
2 onions
1 sweet yellow pepper
1 sweet red pepper
¼ cup (50 mL) PC Splendido Extra Virgin Olive Oil - Cold Pressed
1/2 tsp (2 mL) salt
1/2 tsp (2 mL) freshly ground black pepper
2 tsp (10 mL) PC Splendido Balsamic Vinegar of Modena - Two Leaf
1 pkg Butchers Choice Mild Italian Sausage, about 1.2 kg

Instructions

  1. Place potatoes in medium saucepan. Add cold water to cover. Bring to a boil, reduce heat to medium, cover and cook for 20 minutes or just until potatoes are tender. Drain. Cool Completely. Once cool, cut into wedges about ¾-inch (2 cm) thick. Set aside.
  2. Peel onions and cut into wedges about 1-inch (2.5 cm) thick. Stem and core peppers and cut into triangular pieces 2 inches (5 cm) wide at widest point. In a bowl, toss together onions, peppers, 1 tbsp (15 mL) of the oil, and half of the salt and pepper. In another bowl, toss together potato wedges, 1 tbsp (15 mL) of the oil, and remaining salt and pepper. In third bowl, stir together balsamic vinegar and remaining oil.
  3. Preheat barbecue to medium heat.
  4. Place six sausages on greased grill. Save remaining sausages for another use. Close lid. Cook for 15 to 16 minutes, turning occasionally, or until golden and cooked through. Meanwhile, place peppers, onions and potatoes on same greased grill; close lid and cook for 8 to 10 minutes or until vegetables are softened and nicely grill-marked.
  5. Remove vegetables from grill and toss with vinegar-oil mixture. Divide vegetable mixture among six plates. Add sausages. Serve immediately.
