Mashed Cauliflower with Goat Cheese

Cauliflower is high in Vitamin C and contains iron. Cruciferous vegetables such as cauliflower have been shown to protect against some forms of cancer. Adding some potato to cauliflower helps it mash to a nicer consistency.

Ingredients

1 tsp (5 mL) caraway seeds
1 large head cauliflower, trimmed and separated into florets
2 yellow-fleshed potatoes, peeled and cubed
1/4 tsp (1 mL) salt
1/4 tsp (1 mL) freshly ground black pepper
1 pkg (140 g) PC Blue Menu Goat's Milk Cheese
1/4 cup (50 mL) finely chopped chives or green onions

Instructions

  1. In small nonstick frying pan set over medium heat, toast caraway seeds, shaking pan often, for 3 minutes or until fragrant. Transfer to small bowl and set aside.
  2. Place cauliflower and potatoes in Dutch oven or large, wide saucepan. Add enough water to cover. Bring to a boil. Reduce heat and simmer, covered, for 20 minutes or until tender. Drain well; return vegetables to Dutch oven. Mash until smooth.
  3. Stir in salt, pepper, goat’s cheese, toasted caraway seeds and 3 tbsp (45 mL) of chives. Transfer to a serving bowl and sprinkle with remaining chives.
