Here’s a delicious pizza topping combo you may never have thought of. Serve with hot pepper flakes on the side, for those who like to spice up their pizza.

Ingredients

1 tbsp (15 mL) olive oil
1 tbsp (15 mL) chopped garlic
1 pkg (300 g) frozen spinach, thawed, squeezed dry and chopped
1/4 tsp (1 mL) freshly ground black pepper
1/8 tsp (0.5 mL) sea salt
1 pkg (200 g) PC Blue Menu Multigrain Thin Pizza Crust
3 fresh figs, thinly sliced
2/3 cup (150 mL) crumbled PC Blue Menu Goat's Milk Cheese
1 jar (680ml) strained tomatoes (passata)

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In large nonstick frying pan, heat oil over medium heat; cook garlic, stirring frequently, for 2 minutes or until soft and fragrant. Add spinach, pepper and salt and heat through. Set aside and cool slightly.
  3. Place pizza crust on work surface. Evenly spread strained tomatoes over surface. Top with spinach mixture. Garnish with fig slices and crumbled goat’s cheese.
  4. Bake directly on the middle rack for 6 to 8 minutes or until crust is crispy and cheese is melted.

Chef's Tips

To squeeze the thawed spinach dry, place in a clean tea towel and wring out over the sink.
