Topping off a meatloaf with a richly flavoured tomato sauce gives it a final hit of flavour and a wonderfully appealing glaze.

Ingredients

1 lb (500 g) lean organic ground beef
1 cup (250 mL) PC Organics Quick Oats
2 PC Organics Eggs - Large , lightly beaten
1 PC Organics Onions , chopped
1 1/4 cups (300 mL) PC Organics Pasta Sauce - Tomato & Basil
1/4 tsp (1 mL) salt
1/4 tsp (1 mL) freshly ground black pepper

Instructions

  1. Preheat oven to 400°F (200°C). Spray 9 x 5-inch (2 L) loaf pan with cooking spray.
  2. In large bowl, combine beef, oatmeal, eggs, onions, ¾ cup (175 mL) of the sauce, and salt and pepper. Mix thoroughly. Press mixture firmly into prepared pan. Spread remaining sauce evenly over top.
  3. Bake meatloaf in middle of oven for 40 to 45 minutes or until a thermometer inserted in centre of meatloaf registers 160°F (70°C). Let stand 10 minutes before serving.
