Ingredients

1 cinnamon stick
1 cup (250 mL) PC Blue Menu Ricotta Whey Cheese
1 tbsp (15 mL) PC Acacia Blossom Honey
6 PC Crisp & Thin Whole Grain Crackers with Flax & Honey
1 tbsp (15 mL) finely grated orange rind
1/2 cup (125 mL) fresh raspberries
1/3 cup (75 mL) fresh blueberries

Instructions

  1. Place ricotta in fine-meshed sieve set over a bowl. Refrigerate for 1 hour or up to 24 hours.
  2. Transfer drained ricotta to a bowl, discarding any liquid in bowl under sieve. Vigorously whisk honey, orange rind and cinnamon into ricotta for about 10 strokes. Divide between two bowls. Top with berries and serve each portion with three crackers.
