Here’s a twist on meatloaf the whole family will love! The bacon on top gets slightly crispy, making it extra yummy.

1/2 cup (125 mL) PC Lightly Buttered Flavour Sourdough Croutons
1/2 cup (125 mL) 2% milk
2 tbsp (25 mL) PC Salted Country Churned Butter
1 large onion, finely diced
1 egg
1 tbsp (15 mL) PC Horseradish Dijon
1 tbsp (15 mL) ground PC Grilling & Roasting Seasoning Grinder
1 lb (500 g) extra lean ground turkey
5 slices PC Naturally Smoked Bacon

Instructions

  1. Preheat oven to 375°F (190°C). Spray rimmed baking sheet with cooking spray.
  2. In bowl stir together croutons and milk. Soak for 15 minutes or until croutons are softened. Meanwhile in nonstick frying pan, melt butter over medium heat; cook onions for 10 minutes, stirring occasionally, or until soft and golden. Set onions aside to cool for 5 minutes. Using fork, mash croutons.
  3. In large bowl, stir together onions, crouton mixture, egg, mustard and grinder. Using your hands or wooden spoon, gently mix in turkey without compressing meat until thoroughly combined. Do not overwork mixture. Transfer mixture to centre of prepared baking sheet. Using hands, shape into loaf about 8 X 4 X 1-1/2 inches (20 X 10 X 4 cm). Lay strips of bacon lengthwise along top of loaf, slightly overlapping them.
  4. Bake in centre of oven for 45 to 50 minutes or until instant read thermometer reads 165°F (74°C). Let cool for 10 minutes. Using two metal spatulas, transfer to cutting board and slice. Serve with mashed potatoes and steamed vegetables, if desired.

Substitute extra lean ground chicken, if you prefer.
