If your family loves fried rice at your local Chinese restaurant, try this easy at-home version. With egg and bacon, this is a main course, but if you’d like you can serve smaller portions as a side dish.

Ingredients

2 pouches (each 283 g) PC Cooked Whole Grain Brown Rice Sides
4 tsp (20 mL) canola oil
1 large onion, diced
4 green onions, chopped
2 tbsp (25 mL) PC Blue Menu Turkey Bacon-Style , diced
3/4 cup (175 mL) frozen peas
2 cloves garlic, minced
3 tbsp (45 mL) low sodium soy sauce
5 PC Blue Menu Oméga-3 Eggs - Large

Instructions

  1. One pouch at a time, place rice pouches on a paper towel, seam side up. Pouch is self-venting; do not puncture, tear or cut. Microwave on HIGH for 3 minutes.
  2. Meanwhile, in large nonstick frying pan or wok, heat 2 tsp (10 mL) of the oil over medium-high heat. Cook onion and green onions, stirring frequently, for about 4 minutes or until softened. Stir in turkey bacon, peas and garlic; cook for 1 minute. Add rice and 2 tbsp (25 mL) of the soy sauce; cook for 2 minutes. Transfer to large bowl.
  3. In small bowl, whisk together eggs and remaining soy sauce.
  4. In same frying pan, heat remaining oil over medium-high heat. Pour eggs into pan, stirring vigorously with wooden spoon to scramble eggs. Add rice mixture and stir to combine.

Chef's Tips

Garnish with additional chopped green onions, coriander leaves and orange wedges.
