Ingredients

1 pkg (300 g) frozen spinach, thawed and drained
1 tbsp (15 mL) canola oil
1 small onion, finely chopped
1/2 cup (125 mL) PC Blue Menu Cream Cheese - Spreadable Original
1/4 tsp (1 mL) ground nutmeg
4 PC Blue Menu Oméga-3 Eggs - Large
1/8 tsp (0.5 mL) sea salt
1/8 tsp (0.5 mL) freshly ground black pepper

Instructions

  1. Preheat oven to 375°F (190°C). Spray four ¾ cup (175 mL) ramekins with cooking spray; set aside. Squeeze spinach dry in clean tea towel; set aside.
  2. In frying pan, heat oil over medium heat; cook onion, stirring frequently, for 4 to 5 minutes or until softened.
  3. In food processor, combine onion, spinach, cream cheese, nutmeg and 2 tbsp (25 mL) water; blend until combined. Divide spinach mixture among prepared ramekins. Using the back of a spoon, press a light indentation into mixture; break an egg into each indentation. Place ramekins on a baking sheet.
  4. Bake in centre of oven for about 20 minutes or until egg white is set but yolk is still runny. Cover with foil; let stand for 5 minutes. Sprinkle with salt and pepper.
