A wonderful cold-weather dish for two. Get the pan good and hot to create a golden crust when searing the fish. Use crinkly Savoy cabbage for a different look.

Ingredients

2 tbsp (25 mL) canola oil
2 tbsp (25 mL) minced shallots
2 PC Blue Menu Turkey Bacon-Style , finely diced
4 cups (1 L) shredded green cabbage
1/2 cup (125 mL) frozen peas
1 tbsp (15 mL) whole grain mustard
1 tbsp (15 mL) white wine vinegar
1/4 tsp (1 mL) freshly ground black pepper
1 pkg (280 g) PC Blue Menu Wild Pacific Halibut Skinless Fillets , thawed
1/8 tsp (0.5 mL) sea salt

Instructions

  1. In large nonstick frying pan, heat 1 tbsp (15 mL) of the oil over medium-high heat; cook shallots and turkey bacon, stirring frequently, for 2 to 3 minutes or until shallots are soft. Add cabbage and peas; cook for 5 minutes, stirring frequently. Stir in mustard, vinegar and pepper; cook for 2 to 3 minutes or until cabbage is tender. Transfer to bowl; cover to keep warm.
  2. Brush halibut fillets with remaining oil; sprinkle with salt. Using paper towel, wipe frying pan; return to medium-high heat. Cook halibut for 3 to 4 minutes per side or until cooked through. Transfer to dinner plates; serve with warm bacon and cabbage.
