Pot de crème is a barely set, creamy French custard served in small dishes. Traditionally it is thickened with eggs and baked in a water bath, but we’ve “cheated” by using Devon custard, eliminating the baking step.

Ingredients

1 1/4 cups (300 mL) 35% whipping cream
2 tbsp (25 mL) granulated sugar
1 bar (300 g) PC Extra Dark Chocolate , chopped
1 can (400 g) PC Devon Custard
PC Sugar, Chocolate & Cinnamon Blend Grinder

Instructions

  1. In saucepan, bring cream to a boil over medium-high heat. Stir in sugar until dissolved. Remove from heat. Whisk in chopped chocolate. Whisk until chocolate is melted and mixture is smooth, 2 to 4 minutes. Stir in custard until thoroughly combined. Divide mixture among 12 ramekins or small dessert bowls. Refrigerate uncovered until set, about 4 hours.
  2. Serve garnished with dollop of whipped cream and/or fresh berries, if desired. Before serving, grind a little grinder over top.

Chef's Tips

Make ahead: May be made up to one day before serving. After initial 4 hour set time, cover ramekins with plastic wrap.

Don’t like chopping chocolate? Break the bar into squares and chop in food processor.
