Kids love miniature versions of things they can pick up in their hands-baby carrots, sandwiches cut with small cookie cutters, and these loonie-sized pancakes.

Ingredients

1 cup (250 mL) PC Organics Original Pancake Mix
1/2 cup (125 mL) PC 100% Pure Maple Syrup
3/4 cup (175 mL) 2% milk
1 large egg
1 tbsp (15 mL) melted butter
3 small firm ripe bananas or 2 medium, sliced in 1/4-inch (5 mm) thick rounds

Instructions

  1. Preheat reversible griddle, flat side up, to setting 4. Preheat oven to 200°F (100°C).
  2. In bowl and using fork, combine pancake mix, milk, egg and butter until smooth.
  3. Add a few banana slices to batter, gently stirring to coat banana. Using fork, transfer batter-covered banana slices onto hot griddle. Repeat, filling griddle with bananas slices but spacing them without touching each other. Cook for 2 to 3 minutes per side or until golden brown. Transfer to baking sheet and place in centre of oven to hold warm. Continue making pancakes until all banana slices are cooked. Makes about 60 to 70 mini-pancakes. If any batter remains, make plain dollar pancakes.
  4. Dust pancakes with icing sugar, if desired. Serve with maple syrup.

 

Chef's Tips

Serve the maple syrup in ramekins and let the kids dip their pancakes.
