Ingredients

1 cup (250 mL) whole milk
1/2 cup (125 mL) 35% whipping cream
4 PC Organics Free Run Large Eggs , separated
1/4 cup (50 mL) PC Salted Country Churned Butter
1/4 cup (50 mL) all purpose flour
Pinch freshly ground black pepper
1 pkg (140 g) PC Soft Unripened Goat's Milk Cheese , cut crosswise in 12 equal slices

Instructions

  1. Preheat oven to 425°F (220°C). Grease 12 cup muffin pan.
  2. In small saucepan, heat milk with cream over medium-high heat until bubbles form around edge of pan. Do not boil. Slowly whisk into egg yolks, whisking constantly. In another saucepan, melt butter over medium heat; stir in flour and cook, stirring, for 3 minutes. Gradually whisk milk-yolk mixture into flour mixture, whisking constantly. Cook, stirring, for 2 to 3 minutes or until mixture is thick enough to coat the back of a spoon. Stir in pepper. Remove from heat. Cool to room temperature.
  3. In clean bowl and using electric mixer, beat egg whites until stiff peaks form. Stir one-quarter into cooled milk-flour mixture. Gently fold in remaining egg whites. Divide evenly among prepared muffin cups.
  4. Bake in centre of oven for 10 to 12 minutes or until puffed and lightly golden. Remove from oven. Immediately place 1 piece of goat cheese on top of each puff. Allow puffs to cool in muffin pan for 15 minutes. Carefully remove from muffin pan and serve.

 

 

Chef's Tips

May be made up to 24 hours ahead of time. Remove from muffin pan, cover and refrigerate. To reheat, place puffs on microwave-safe plate. Microwave on HIGH for 60 to 90 seconds or until warmed through. It is easiest to separate eggs when they are cold, straight from the refrigerator.
