Ingredients

1 can (284 mL) PC Thai Green Curry Sauce - Medium
1 lb (500 g) live mussels
1/2 cup (125 mL) finely diced sweet red peppers
1/2 cup (125 mL) chopped fresh coriander

Instructions

  1. In large saucepan, bring Thai sauce to a boil. Add mussels; cover and cook over high heat for 3 to 5 minutes or until mussels have opened. Discard any that do not open.
  2. Remove pan from heat. Stir in red pepper and coriander. Transfer to large serving platter. Serve immediately.

 

Chef's Tips

Live mussels should close when rapped. Discard any that remain open before cooking. Conversely, once cooked, discard any that are closed.
