This easy potato salad makes a great lunch or dinner for busy toddlers. If your kids prefer a creamier potato salad, stir in milk 1 tablespoon at a time to desired consistency. For adults, top with chopped green onions and freshly ground black pepper

Ingredients

2 cups (500 mL) chopped peeled Yukon Gold potatoes (cut in 1-inch/2.5 cm chunks)
2/3 cup (150 mL) low-fat mayonnaise
3/4 cup (175 mL) diced marble cheese (about 3 oz/90 g)
¾ cup (175 mL) diced dill pickles
2 slices PC Blue Menu Extra Lean Stone Roasted Ham diced
1/4 tsp (1 mL) salt

Instructions

  1. Place potatoes in saucepan. Add cold salted water to cover. Bring to a boil; cook for 8 minutes or just until tender when prodded with a fork. Drain. Cool completely.
  2. In large bowl, crush cooled potatoes with potato masher until smashed but not completely disintegrated. Stir in mayonnaise, cheese, pickles, ham and salt.
