Ingredients

2 large free range eggs
2 tbsp (25 mL) whole milk
Pinch salt
1 tsp (5 mL) unsalted butter
1/4 cup (50 mL) shredded PC Blue Menu Old Light Cheddar Cheese
1 PC Sweet Cocktail Tomatoes on the Vine , cut in 8 wedges

Instructions

  1. In small bowl, whisk together eggs, milk and salt.
  2. In small nonstick frying pan, melt butter over medium-high heat. Swirl butter around to coat pan. Add egg mixture; cook, stirring with rubber spatula, for a few seconds. Add cheese; cook, stirring, for a minute or until egg is cooked through. Transfer to plate and serve tomato on the side.
