Mango salsa adds a fresh and fruity accent to oven-roasted chicken breasts, and is a nice contrast to the spicy Cajun flavour.

Instructions

  1. Preheat oven to 400°F (200°C). Line rimmed baking sheet with foil and spray with PC Blue Menu Canola Oil Cooking Spray.
  2. Using your fingers, gently loosen the skin of each breast. Spread 1/2 tsp (2 mL) seasoning mix under skin of each breast. Press skin back down to cover flesh. Brush breasts all over with oil and sprinkle with remaining spice grinder. Place on prepared baking sheet, skin side up.
  3. Roast in centre of oven for 25 to 30 minutes or until juices run clear when thickest part of flesh is pierced. Loosely tent with foil. Let rest 10 minutes.
  4. Transfer to serving platter. Spoon salsa over breasts. Garnish with fresh coriander and serve with steamed rice, if desired.

Chef's Tips

Roasting chicken breast on the bone and with the skin on adds extra fat, but also keeps the chicken moist. If you are watching calories, remove skin after the rest time and before spooning salsa on top.
