Ingredients

3 cups (750 mL) PC Blue Menu Chicken Broth
1 can (540 mL) PC Blue Menu Six Bean Medley , rinsed and drained
2 white onions, chopped
1 baking potato, peeled and cut in chunks
5 cloves garlic, peeled and smashed
8 cups (2 L) torn Swiss chard greens (about 1 lb/500 g)
1 cup (250 mL) parsley leaves with stems
1-3/4 tsp (9 mL) salt
1/2 tsp (2 mL) freshly ground black pepper
3 tbsp (45 mL) extra virgin olive oil

Instructions

  1. In large saucepan, combine 3 cups (750 mL) water, broth, beans, onions, potato and garlic. Bring to a boil. Reduce heat to simmer; cook uncovered for 20 minutes or until vegetables are tender. Stir in Swiss chard, parsley, salt and pepper; simmer until greens are tender, about 10 minutes.
  2. Using immersion blender or stand blender, purée soup until smooth, leaving some texture if desired. Serve with olive oil drizzled over top.
