Ingredients

1 pkg (140 g) PC Soft Unripened Goat's Milk Cheese
1/4 cups (50 mL) PC Extra Virgin Olive Oil from Tuscany
1/4 cups (50 mL) coarsely chopped, drained PC Colossal Stuffed Queen Olives
1 tsp (5 mL) chopped fresh thyme
1/8 tsp (0.5 mL) freshly ground black pepper
Half PC French Baguette
1 tbsp (15 mL) grated lemon rind

Instructions

  1. Cut goat cheese crosswise into 1/4-inch (5 mm) slices. Arrange on serving platter.
  2. Stir together olive oil, olives, lemon rind and thyme. Season to taste with pepper. Pour over goat cheese. Refrigerate, covered, for at least one hour.
  3. Return goat cheese to room temperature before serving with thin slices of baguette.

Chef's Tips

It’s easiest to slice the goat cheese log straight from the fridge using a heated knife.
