This gussied-up version of the traditional ham and cheese Croque Monsieur makes a great snack or lunch.

Ingredients

2 slices PC Bread & Butter Deli-Sliced Pickles
4 slices PC Splendido Prosciutto Cotto
2 slices French stick, each cut 3/4-inch (2 cm) thick (not baguette)
1 tbsp (15 mL) whole grain Dijon mustard
3 1/2 oz (105 g) PC Double Cream Brie

Instructions

  1. Place bread on toaster oven rack. Toast for 3 minutes or until pale golden. Transfer toast to drip pan.
  2. Spread each toast slice with mustard. Top with pickles, prosciutto and Brie. Place drip pan in toaster oven. Broil for 10 to 12 minutes or until golden and bubbly. Let cool 3 minutes before serving.
