Fresh and easy- a perfect summertime salad. Use a pint of cherry tomatoes, halved, instead of vine-ripened tomatoes, if you prefer.

Ingredients

1 English cucumber, peeled and cut in bite-sized pieces
4 vine-ripened tomatoes, cut in bite-sized pieces
Half medium red onion, thinly sliced
1 tub (175 g) PC Goat's Milk Feta Cheese in Brine drained and crumbled
1 cup (250 mL) drained PC Super Colossal Pitted Black Olives
1/2 cup (125 mL) PC Mediterranean Vinaigrette

Instructions

  1. In large bowl, gently toss together cucumber, tomatoes, onions, feta, olives and vinaigrette.
 

 

Chef's Tips

A perfect salad to accompany barbecued chicken, pork or fish brushed with PC Memories of Tuscany or PC Souvlaki Marinade.
