Ingredients

2 tbsp (25 mL) PC Memories of Thailand Fiery Chili Pepper Sauce
2 tbsp (25 mL) PC 100% Pure Maple Syrup
2 tbsp (25 mL) thinly sliced green onions
2 pkgs (each 280 g) PC Blue Menu Atlantic Salmon Skinless Fillets , thawed
5 cups (1.25L) Coarse salt

Instructions

  1. Soak large cedar plank about 10 X 8-inches (25 X 20 cm) in water overnight, weighting plank down to keep wood submerged.
  2. Preheat gas barbecue to high heat.
  3. Stir together Memories sauce, maple syrup and green onions. Spray flat side of salmon fillets with PC Blue Menu Canola Oil Cooking Spray..
  4. Drain plank. Place on grill. Sprinkle plank lightly with coarse salt. Close lid. Heat plank for 2 to 3 minutes or until top of plank is almost dry. Do not leave barbecue unattended. Keep spray bottle of water handy in case wood catches fire. Place salmon fillets on plank, sprayed side down. Spread tops with Memories sauce mixture. Turn heat to lowest setting. Close lid. Cook for 14 to 16 minutes or until cooked almost all the way through. Place wood in bucket of water to cool before discarding it.

 

Chef's Tips

If your gas barbecue has two burners, preheat both sides. Place plank on one side of grill; after placing salmon on plank, turn burner under plank off and leave the other burner on high.
