In Italy, the lemon-garlic-parsley mixture called gremolata is traditionally sprinkled on osso bucco, or braised veal marrow bones.

Ingredients

1 tbsp (15 mL) PC Breadcrumbs - Italian Style with Parmesan and Romano Cheeses
1 can (540 mL) PC Chicken & Pasta Soup
2 tbsp (25 mL) Italian parsley finely chopped
1 tsp (5 mL) lemon rind finely grated
1/4 tsp (1 mL) black pepper freshly ground
1 clove fresh garlic minced

Instructions

  1. In small bowl, stir together parsley, breadcrumbs, lemon rind, garlic and pepper. Makes about 3 tbsp (45 mL).
  2. Heat soup; ladle into two bowls. Sprinkle gremolata evenly over top.

Chef's Tips

For finely grated zest, without the bitter white pith, invest in a kitchen rasper.
