Mini Chicken Cobb Salad Sandwiches

Warming the buns makes a sandwich feel more like a meal! We stuffed as many Cobb salad ingredients as we could fit in the buns, but if you like you could add a little chopped tomato and/or crumbled blue cheese.

6 slices PC Naturally Smoked Bacon Double Smoked Dry Cured Thick Cut
2 PC Free From Boneless, Skinless Chicken Breasts ,about 500 g
1/4 tsp (1 mL) salt
1/2 tsp (2 mL) freshly ground black pepper
1 ripe avocado, peeled, pitted and sliced in 18 pieces
1 tbsp (15 mL) chopped fresh basil
1/4 cup (50 mL) PC Mayonnaise - Made with Whole Eggs
1 bag (500 g) PC Mini Ciabatta Burger Pre-Sliced Buns

Instructions

  1. Preheat oven to 375°F (190°F). Preheat barbecue to medium heat.
  2. Line a baking sheet with foil or parchment paper. Arrange bacon slices on baking sheet. Bake, turning once, for about 18 to 22 minutes or until crispy. Drain on paper towel, then crumble. Meanwhile, spray chicken breasts with cooking spray and sprinkle with salt and half the pepper. Place on grill, cover and cook for 6 to 8 minutes per side or until cooked through. Cut into 3/4 inch (2 cm) chunks.
  3. In large bowl, toss together bacon, chicken, avocado, basil, mayonnaise and remaining black pepper.
  4. Place ciabatta buns on a clean baking sheet. Heat in oven for 5 minutes. Divide chicken mixture among buns. Arrange on a serving platter.
