Ingredients

5 cups (1.25 L) baby arugula
1/2 cup (125 mL) chopped green onions (about 4)
2 tbsp (25 mL) PC New World EVOO Extra-Virgin Olive Oil
2 tsp (10 mL) white wine vinegar
1/4 tsp (1 mL) salt
1 pkg (200 g) PC Blue Menu Multigrain Thin Pizza Crust
3 oz (90 g) PC Blue Menu Goat's Milk Cheese , crumbled (about ½ cup/125 mL)
2/3 cup (150 mL) shredded PC Blue Menu Skim Mozzarella Cheese

Instructions

  1. Preheat oven to 400?F (200?C).
  2. In food processor, combine arugula, onions, olive oil, vinegar, salt and 3 tbsp (45 mL) water; blend until smooth.
  3. Place pizza crust on baking sheet; spread arugula mixture over top, leaving a ¾-inch (2 cm) border around pizza crust edges. Sprinkle goat cheese and mozzarella cheese over top. Bake for about 14 minutes or until cheese is melted and bubbly.
