Grilled Arugula Prosciutto Pizza

Arugula and prosciutto are a winning combination. Instead of a main course, this would make an amazing finger food to serve at a backyard party- cut each pizza into narrow fingers and grill up more to order!

Ingredients

1 tbsp (15 mL) PC Roasted Garlic Olive Oil
1 (300 g) PC Stone-Baked Flatbread
1 cup (250 mL) PC Splendido Shredded Part Skim Stretched Mozzarella Cheese
2 slices PC Splendido Prosciutto Naturally Dry Cured Ham cut in thin strips
1/2 cup (125 mL) arugula, cut in thin ribbons
1/8 tsp (0.5 mL) freshly ground black pepper

Instructions

  1. Preheat barbecue to medium heat.
  2. In bowl, toss arugula and half of garlic oil. Set aside.
  3. Brush remaining oil over both sides of flatbread. Place on greased grill. Grill 5 to 6 minutes or until lightly grill-marked. Turn flatbread. Sprinkle with mozzarella. Close lid; grill for 5 to 6 minutes or until cheese is melted. Remove from grill. Scatter arugula on top of flatbread. Place prosciutto on top of arugula. Sprinkle with pepper. Cut into squares.

 

Chef's Tips

Instead of barbecuing, preheat oven to 400°F (200°C). At step 3, brush remaining oil over one side of flatbread; place on baking sheet oil side up. Top with mozzarella. Bake in centre of oven for 10 minutes. Remove from oven; sprinkle with arugula, prosciutto and pepper.
