Montreal’s deli steak spice meets Mexico’s coriander in this fajita that’s sure to become a classic.

Ingredients

2 pkgs PC Large Soft Flour Tortillas
1 box (600 g) PC Steak Skewers - Montreal Spice
1 tbsp (15 mL) PC Splendido Extra Virgin Olive Oil - Cold Pressed
1 sweet red pepper thinly sliced
1 sweet green pepper, thinly sliced
1 medium red onion thinly sliced
1 cup (250 mL) PC Canadian White Cheddar Cheese - Aged 2 Years shredded
1 cup (250 mL) loosely packed whole fresh coriander leaves
1 cup (250 mL) sour cream

Instructions

  1. Preheat barbecue to medium heat.
  2. Place 12 of the tortillas on greased grill, saving remainder for another use; cook for 10 seconds per side or until warm. Stack and wrap in foil to hold warm. Place frozen steak skewers on grill; cook over medium heat for 18 to 20 minutes, turning occasionally. Meanwhile, in nonstick frying pan heat oil over medium-high heat; cook peppers and onions for 5 minutes, stirring occasionally, or until tender-crisp.
  3. Place a steak skewer on a warm tortilla; remove skewer. Top with some peppers and onions, cheddar, coriander and sour cream. Roll up. Repeat with remaining ingredients.

Place all the fixings on the table buffet-style, and let everyone assemble their own fajitas.
