A hearty sandwich with solid Mediterranean flavours. Goat cheese, roasted red peppers and prosciutto are layered between slices of grilled rustic bread.

Ingredients

1 tbsp (15 mL) PC Splendido Extra Virgin Olive Oil - Cold Pressed
2 slices PC L'Européenne Bread - Rustic White
2 tbsp (25 mL) PC Soft Unripened Goat's Milk Cheese
3 slices PC Splendido Prosciutto cut in quaters
1 tbsp (15 mL) roasted red peppers chopped, drained

Instructions

  1. Brush half of oil over one side of bread. Grill oiled side down over medium-high heat for 2-3 minutes or until golden brown and grill-marked. Brush top with rest of oil, flip and repeat.
  2. Combine goat cheese and red peppers; spread over one slice of bread. Top with prosciutto and other slice of bread. Cut in half.

Chef's Tips

This sandwich could be done equally well in a preheated non-stick skillet instead of the grill.
