In the American south, they slowly barbecue spiced pork shoulder until tender, pull it apart with two forks, stir in some BBQ sauce, and serve it on a bun. Our BBQ Pork Sandwich uses tenderloin - a faster, easier version of a pulled pork sandwich.

Ingredients

1 pork tenderloin, about 12 oz/375 g
1 tbsp (15 mL) PC 100% Pure Safflower Oil
1/3 cup (75 mL) PC Barbecue Sauce - Chicken and Rib
4 PC Gigantico Burger Buns
1/4 tsp (1 mL) each salt & freshly ground black pepper
2 tomatoes, sliced

Instructions

  1. Preheat barbecue to medium-high heat.
  2. Brush pork tenderloin with oil and sprinkle with salt and pepper. Place on grill. Cook with lid open for 15 to 17 minutes, turning occasionally, or until cooked through. Remove from grill. Let rest 5 minutes.
  3. Thinly slice pork. In bowl, stir together pork and barbecue sauce.
  4. Grill burger buns cut side down for 1 to 2 minutes or until lightly toasted. Remove from grill. Place one-quarter of pork mixture on each bun bottom. Top with sliced tomato and bun tops.

 

Chef's Tips

In cold weather, use a grill pan on the stove top.

Use a PC French Baguette, sliced horizontally and cut into four equal portions, instead of burger buns if you prefer.
