The toast-and-cheese garnish transforms creamy canned mushroom soup into a worthy dinner starter or elegant lunch.

Ingredients

6 slices, each 1/2 inch (1cm) thick PC French Baguette
1 tbsp (15 mL) PC Splendido Extra Virgin Olive Oil - Cold Pressed
1 can (540 mL) PC Cream of Mushroom Ready To Serve Soup
2 oz (60 g) English Stilton Cheese or other blue cheese, at room temperature
1 tbsp (15 mL) chopped fresh Italian parsley

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Brush both sides of baguette slices with olive oil. Place on baking sheet. Bake for 10 minutes or until crisp and golden. Cool slightly.
  3. Spread toasts with blue cheese. Heat soup; ladle into two bowls. Float two toasts on top of each serving. Sprinkle with parsley. Serve other toasts on the side.

 

Chef's Tips

 

Little Stilton toasts also make great appetizers in their own right for drinks.
