Craving something salty and sweet? This is your snack food! You need a candy thermometer, also a very large saucepan so the boiling sugar does not splatter out of the pan. It’s safest to use a long-handled wooden spoon to stir and wear long sleeves.

1 (81 g), pouch PC Blue Menu Mini Bags Natural Flavour Microwave Popping Corn
1 cup (250 mL) PC Party Peanuts Virginia Variety
1 tsp (5 mL) PC MEMORIES OF Sicilia Coarse Sea Salts
1/2 cup (125 mL) unsalted butter
1 1/2 cups (375 mL) packed brown sugar
1/2 cup (125 mL) no name Corn Syrup
1 tsp (5 mL) no name Pure Vanilla
1/2 tsp (2 mL) baking soda

Instructions

  1. Pop popcorn according to package directions. Place in a large bowl near stove. Remove unpopped kernels and discard.
  2. Spray large rimmed baking sheet with PC Blue Menu Canola Oil Cooking spray. Place near stove.
  3. In large 24 cup (6 L) saucepan, melt butter over medium heat. Using wooden spoon, stir in brown sugar and corn syrup until it melts. Bring to a boil over medium heat without stirring. Boil until candy thermometer reads 300°F (150°C), about 8 minutes. Mixture will be dark golden brown.
  4. Remove pan from heat. Stir in vanilla and baking soda. Very carefully stir in some of popcorn, then some of peanuts and some of salt. Continue stirring in, alternating popcorn, nuts and salt, until all ingredients are combined. Carefully pour mixture onto prepared baking sheet, spreading to cover baking sheet. Let cool at room temperature until caramel has hardened, about 30 minutes.
  5. Break into small pieces to serve. Makes about 14 cups (3.5 L).
