Chicken and Apple Quesadillas

The apple gives this unusual quesadilla filling a slight sweetness. Cut into wedges and serve with sour cream as a dip, if desired.

Ingredients

1 cup (250 mL) shredded PC 1-Year Old Canadian White Cheddar Cheese
4 PC Original Wraps
1 cup (250 mL) shredded cooked chicken (about 1 skinless boneless chicken breast)
1 Golden Delicious apple peeled and coarsely grated
1 green onion, thinly sliced
1/4 tsp (1 mL) salt
1/4 tsp (1 mL) freshly ground black pepper
1/4 tsp (1 mL) dried thyme leaves

Instructions

  1. Preheat oven to 350°F (180°C). Grease a rimmed baking sheet.
  2. In large bowl, stir together chicken, cheese, apple, green onion, salt, pepper and thyme. Place 1/2 cup (125 mL) chicken mixture on bottom half of a wrap. Fold top half over filling, pressing gently to close. Repeat with remaining filling and wraps. Place on prepared baking sheet.
  3. Bake in centre of oven for 15 minutes or until golden and cheese is melted. Serve warm or cold.

Chef's Tips

If you don’t have cooked leftover chicken on hand, speed preparation by buying a cooked rotisserie chicken at the grocery store.
