Halloom is a mild cheese that is sturdy and stands up well to grilling. It has a slight squeakiness when you bite into it, like fresh cheese curds.

Ingredients

1/2 cup (125 mL) drained PC Sliced Sweet Roasted Red Peppers
1/4 cup (50 mL) PC Marinade - Souvlaki
1 pkg (250 g) PC Halloom Semi-Soft Unripened Cheese
2 tbsp (25 mL) chopped fresh mint
Half lemon, cut in 4 wedges

Instructions

  1. Preheat barbecue to medium heat. In bowl, toss peppers with half of marinade. 
  2. Cut halloom lengthwise into 8 slices. Brush lightly with some of remaining marinade. Place on well-greased grill; cook for 2 to 3 minutes or until golden and crisp. Carefully scrape between cheese and grill; turn and cook another 2 to 3 minutes or until other side is golden and crisp. Meanwhile, place lemon wedges on grill; cook 1 to 2 minutes. Carefully remove cheese from grill. Brush with remaining marinade. Divide halloom among four small plates. Top with pepper mixture and sprinkle with mint. Serve with a lemon wedge.

Serve with grilled PC Naan Flatbread, if desired.
