Ingredients

1 bag (680 g) PC Golden Fingerlings Yellow Potatoes
2 tbsp (25 mL) olive oil
2 tsp (10 mL) fresh lemon juice
1/4 tsp (1 mL) freshly ground black pepper
1 PC Easy Cook! Herb & Garlic Extra Lean Seasoned Pork Tenderloin ,about 700 g
1 tbsp (15 mL) chopped fresh basil

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In large roasting pan, toss together potatoes, olive oil, lemon juice, salt and pepper. Roast in centre of oven for 12 minutes or until starting to brown. Using wooden spoon, push potatoes out to sides of roasting pan to make room for pork. Add pork to centre of pan. Reduce oven temperature to 400°F (200°C). Roast for 27 to 29 minutes, turning pork and potatoes once, or until cooked through.
  3. Transfer pork to cutting board. Let rest for 5 minutes. Cut into 1-inch (2.5 cm) thick slices and serve alongside the potatoes, sprinkled with basil. Serve with lemon wedges and PC Organics frozen vegetables, if desired.
