Prosciutto and melon is a classic combination. We’ve added a little goat cheese and arugula in these delectable, two-bite bundles.

Ingredients

12 slices (about 6 oz/175 g) PC Splendido Prosciutto Naturally Dry Cured Ham
1 pkg (140 g) PC Soft Unripened Goat's Milk Cheese
1/2 cantaloupe melon peeled and seeded
1/2 bunch arugula

Instructions

  1. Cut melon into sticks 1-1/2 X 1/2 x 1/2-inches (4 X 1 X 1 cm).
  2. Spread 4 tsp (20 mL) goat cheese over each piece of prosciutto. Cut in half lengthwise. Place a leaf of arugula and a melon stick crosswise across one end of prosciutto. Tightly roll up.
  3. Repeat with remaining goat cheese, prosciutto, arugula and melon. Makes 24 pieces.
