Ingredients

1 pkg (568g) PC Blue Menu Thick & Juicy Wild Pacific Pink Salmon Burgers
1 small head Boston lettuce, cored and washed
1 medium avocado, peeled, pitted and sliced
1/2 cup (125 mL) thinly sliced English cucumber
4 cocktail tomatoes, quartered
1/4 cup (50 mL) PC Blue Menu Ranch Dressing
2 tbsp (25 mL) fresh chives cut in ½-inch (1 cm) lengths

Instructions

  1. Preheat barbecue to medium-high heat. Lightly spray both sides of salmon burgers with cooking spray.
  2. Cook burgers 6 to 8 minutes; turn and continue to cook another 6 to 8 minutes or until cooked through. Remove from grill; set aside and tent with foil to keep warm.
  3. Meanwhile, divide and arrange lettuce leaves on 4 dinner plates. Arrange avocado and cucumber slices on top. Add tomatoes and place one salmon burger on each plate. Drizzle with ranch dressing; garnish with chives.
