Ingredients

1 1/2 cups (375 mL) 2% milk
1 cup (250 mL) PC Ranch Dressing
5 baking potatoes (about 3lb/1.5 kg), peeled and sliced 1/16 inch (2 mm) thick
1 onion, diced
1/2 tsp (2 mL) salt
1/2 tsp (2 mL) freshly ground black pepper
2 cups (500 mL) shredded PC 1-Year Old Canadian White Cheddar Cheese

Instructions

  1. Preheat oven to 425°F (220°C). Grease 13 x 9-inch (3 L) glass baking dish.
  2. Combine milk and dressing.
  3. Place half of potatoes in prepared baking dish, overlapping them. Sprinkle with half of onions, salt and pepper. Pour half of dressing mixture over potatoes. Repeat layers. Cover dish with foil.
  4. Bake in centre of oven for 60 to 70 minutes or until potatoes are tender when pierced with a fork.
  5. Remove foil, sprinkle with cheese and bake uncovered for 15 to 20 minutes or until golden. Let stand 10 minutes before serving.

Chef's Tips

Do not rinse baking potatoes after slicing as it removes some of the starch, and the starch helps the layers stay together once cooked.

Recipe can be made through to end of step 4 the day before serving. Refrigerate. Bring to room temperature before proceeding with step 5.
