Ingredients

1 1/2 tsp (7 mL) PC 100% Pure Maple Syrup
2 tbsp (25 mL) PC Salted Country Churned Butter
2 tbsp (25 mL) orange marmalade
2 lb (1 kg) sweet potatoes, scrubbed
1/2 tsp (2 mL) finely grated fresh ginger root

Instructions

  1. Using fork, prick sweet potatoes in several places. Place in microwave on paper towels. Cook on MEDIUM-HIGH (70%) for 15 minutes or until very tender. Let cool slightly, then cut in half. Scoop flesh out of skins into bowl. Mash. Hold warm. Discard skins.
  2. In small saucepan, combine butter, marmalade, maple syrup and ginger; cook over medium-low heat until melted. Add to mashed sweet potatoes; mash until combined.

Chef's Tips

Make ahead: Refrigerate for up to 24 hours, then reheat in microwave.
