Cacciucco (kah-CHOO-ko) means "mixture". A jar of strained tomatoes forms the base for this ready-in-a half-hour substantial fisherman's soup.

Ingredients

3 tbsp (45 mL) PC Splendido Extra Virgin Olive Oil - Cold Pressed
3 large leeks, white part only, finely sliced
4 cups (1 L) water
1 bottle (660 mL) Bella Tavola Strained Tomatoes
1/2 cup (125 mL) dry white wine
6 large slices crusty Italian bread
1 pkg (280 g) PC Blue Menu Atlantic Salmon Skinless Fillets , thawed, cut lengthwise in half, then crosswise into 1-inch (2.5 cm) pieces
1 pkg (454 g) PC Raw Peeled Pacific White Shrimp
1 lb (500 g) live mussels

Instructions

  1. In large saucepan, heat over oil medium-low heat. Add leeks; cover and cook for 10 minutes, stirring occasionally, or until soft. Do not brown. 
  2. Stir in water, strained tomatoes and wine. Cover; reduce heat to low. 
  3. Preheat broiler. Arrange bread on baking sheet. Toast in oven under broiler for 1 to 2 minutes, or until golden brown. 
  4. Bring tomato mixture to a boil. Stir in salmon, shrimp and mussels. Cover and cook for 3 to 5 minutes, or until shrimp have turned pink and mussels have opened. Discard any unopened mussels.
  5. Serve soup with toasted bread. 

 

 

Chef's Tips

Soup may be made a day ahead, to the end of step 2. Refrigerate and reheat when ready to continue.
