Mini meat loaves cook up faster than one big loaf baked in a loaf pan. More fun for the kids too, who love mini anything. Shredding the vegetables and mixing them right into the meatloaf just might defeat the kids who hate veggies!

Ingredients

1 small onion
1 small sweet potato, peeled
3 - 4 large cremini mushrooms
1 lb (500 g) lean ground beef
1 cup (250 mL) plain dry bread crumbs
2 PC Blue Menu Oméga-3 Eggs - Large
1/2 cup (125 mL) PC Smokin' Stampede Beer & Chipotle Barbecue Sauce Naturally Flavoured

Instructions

  1. Preheat oven to 425°F (220°C). Line baking sheet with foil; spray with cooking spray.
  2. Using large holes of box grater, shred onion, sweet potato and mushrooms. In bowl, combine shredded vegetables, beef, bread crumbs, eggs and half of BBQ sauce. Form into eight mini loaves, each about 4 x 2 inches (10 x 5 cm). Place on prepared baking sheet.
  3. Bake in centre of oven for 10 minutes. Remove from oven; brush with remaining BBQ sauce. Return to oven; bake another 7 to 10 minutes or until sauce on top is lightly browned and bubbly.
