Ingredients

250 g PC Naturally Smoked Bacon (half 500 g pkg), cut in 1/2 inch (1 cm) pieces
1 large red onion, coarsely chopped
1 1/2 lb (750 g) Bussels sprouts, trimmed and cut in half lengthwise
1/2 tsp (2 mL) granulated sugar
1/4 tsp (1 mL) salt
1/4 tsp (1 mL) freshly ground black pepper

Instructions

  1. In large nonstick frying pan, cook bacon over medium heat until browned and crispy, about 5 to 8 minutes. With slotted spoon, transfer bacon to paper towel-lined baking sheet. Pour off all but 1 tbsp bacon fat from pan.
  2. Return pan to burner. Increase heat to medium-high. Add onions and sprouts to pan. Stir in sugar, salt and pepper; cook until vegetables are browned, about 5 minutes.
  3. Add 1 cup (250 mL) water. Bring to a boil. Cover, reduce heat to medium-low and cook for 20 to 25 minutes, stirring occasionally, or until almost all the water has evaporated. Stir in bacon and serve.

 

Chef's Tips

Brussels sprouts can be prepared a day ahead of time. Refrigerate, reheat and add bacon just before serving.
