Cooking Instructions

Preheat oven to 400°F (200°C).

Brush oil over bread slices. Place on baking sheet. Bake in centre of oven for 10 to 15 minutes or until golden and crispy. Reduce oven temperature to 325°F (160°C).

Divide goat cheese into four equal portions. Shape each portion into a patty 1-½ inches (4 cm) in diameter. Coat generously with toasted almonds, pressing gently to adhere to whole patty. Chill for 15 minutes.

Meanwhile, in large bowl combine romaine, radicchio, tomatoes, basil, salt and pepper; set aside.

Place goat cheese patties on baking sheet. Bake in centre of oven for 5 minutes or until warm.

Toss dressing with salad greens until mixed. Divide among four plates; top each with two baguette slices and a goat cheese patty.
